
It's commonly acknowleged,
as found in jelly/jam receipes, that Calamondin makes an excellent
marmalade, but for me it also surpasses the use of limes or lemons
for drinks like ice-tea, fruit punch, and for use on papayas or
salad dressings. Not only does it offer the tartness of limes
and lemons, but also provides a distinct, pungent flavor that
makes your tongue dance. As we say here locally, it's a "broke
da mouth flavah!"
The calamondin fruit is suppose to take up to a year to ripen into an orange color. But I find the straight orange colored ones sometimes rotten and not as pungent. So I usually pick them half-ripe. They're a little smaller than your typical lime, have a thinner skin, and seem best used within a week (they get a little mushy thereafter unrefrigerated).
